Abstract. Catering, on the one hand, meets human needs in food, communication, and rest, and, on the other hand, as a type of economic activity, contributes to the creation of national and world products, to the growth of employment, and promotes the development of other spheres of the economy. Therefore, it is relevant and practically significant to identify the characteristics of the current state of the catering market and the factors of development of the global market of eating out. Despite a short-term decline during the pandemic, the volume of the global catering market has a positive trend. Geographically, the total revenue of the global catering industry is unevenly distributed, with the United States of America and the People’s Republic of China accounting for almost half of its size. Its formation among catering companies, which depends on the type of service, is also highly concentrated, as full-service and limited-service restaurants account for about two-thirds. The article shows that the main factors of development of both the world catering market as a whole and its separate segments are the growth of population in the world, active urbanization, growth of consumer incomes, high rhythm of life, increase in the number of tourists, and technological advances.
